apple, hazlenut and almond cake

also works well with other fruit when in season such as plums, (delicious served with clove ceam)

 

Ingredients

1 vanilla pod, deseeded
3 eggs
200g sugar

 

225g milk
165g butter

 

150g freshly ground hazelnuts
50g freshly ground almonds
60g plain flour
1 desertspoon baking powder

 

6 aples (braeburns work well) finely sliced
2 ablespoons granulated sugar

 

10" springform cake tin, lined

Method

Whisk the first three ingredients together until very light and frothy.
Melt the butter ith the milk and pour into the egg and sugar mixture and whisk well.
Add the ground nuts, flour and baking powder and continue whisking until well mixd.
Pour into a lined tin and sprnkle on the apple.  Bake at 180 for 20 mins or so. Then sprinkle on the granulated sugar and cook for a further 20mins until the cake is cooked.
Serve with vanila flavoured creme fraiche.
